The real reason for making this EGGLESS PAPAYA BANANA CAKE was to eat papaya without knowing I am eating one 😛 . This cake does not taste like papaya at all. Which is the best part for me 🙂

Most people don’t like papaya. I think it’s the only fruit I don’t like. But the list of health benefits papaya has is never ending. It is rich in vitamin A and C, therefore, it’s good for your immune system. Papaya’s high fibre content not only promotes good digestive health but also lowers cholesterol level.

Fun fact about papaya, Christopher Columbus called it “the fruit of angels” because of it is so sweet and silky 😀 . I know, people who hate papaya will not buy this 😛 . But I assure you this cake tastes more like banana cake /bread. So, you can get all the goodness of papaya without realizing you are eating it 😛

This is a very easy recipe with simple ingredients mainly whole wheat flour, papaya and banana puree. Also, I made glace icing for this cake and trust me it took me 5 minutes to make this glace. I loved how this cake looked (considering I am not an expert in baking / icing 😛 ).

INGREDIENTS

  • One and a half cup whole wheat flour
  • 3/4 cup powdered sugar
  • 3/4 cup ripe papaya puree
  • 3/4 cup ripe banana puree
  • 1/2 cup oil
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 tablespoon blanched sliced almonds
  • Pistachio for garnish

PREPARATION

  • Preheat oven at 350 degree F and grease the cake pan. Keep it aside.
  • In a mixing bowl sift whole wheat flour, baking powder and baking soda.
  • Now, in another bowl mix papaya puree, banana puree, oil, vanilla essence and sugar together.
  • Add the wet ingredients in the wheat flour and fold well.
  • Pour the batter in the pre greased cake pan. Gentle tap the pan to level the batter.
  • Bake for 30-40 minutes or until a toothpick comes out clean from the centre of the cake. Let the cake cool completely before starting with icing.
  • To make glace icing, in a small bowl tale 1 cup of icing sugar and add 1 table spoon of milk.
  • Mix/beat it well with a spoon. Add one more tablespoon of milk and mix again until smooth and silky consistency.
  • After the cake is completely cool, place it on a plate or tray and pour the icing randomly on the cake, spread with spatula if needed. Let the icing drip on its own and make random patterns. Alternatively you use a spoon or piping bag.
  • Garnish with dry fruits. Let the icing set for few minutes. Eggless papaya banana cake is ready.
