You can not go wrong with this overnight chocolate chia pudding. It is creamy, chocolaty, healthy and easy. Make this overnight pudding for breakfast, snack or dessert.

I always add 1 tablespoon of chia seeds in my oatmeal and smoothie to add little crunch. I liked this pudding because it was creamy and not too sweet (you can adjust sweetness according to your liking).

Chia seeds are loaded with health benefits. They are rich in antioxidants, very high in fibre, high quality protein and omega-3 fatty acid. 2 tablespoon of chia seeds have 10gm of fibre, this prevent you from over eating and hence helps in weight loss.You can sprinkle chia seeds on yoghurt, smoothies, oatmeals or make pudding.

Overnight chocolate pudding is easy to make and can be stored in refrigerator for 3-4 days. Make it in small jars and keep refrigerated (will be good for 3-4 days). Carry them in the morning for breakfast or for guilt free evening snack.

INGREDIENTS

  • 1/2 cup chia seeds
  • one and half cup milk ( almond or coconut milk for vegan option)
  • 1/4 cup unsweetened cocoa powder
  • 3-4 tablespoon maple syrup or sugar
  • 1/2 teaspoon vanilla extract (optional)

PREPARATION

  • In a small bowl mix together milk, cocoa powder, vanilla extract, maple syrup. Now, add chia seed and whisk until smooth paste and everything is combined.
  • Cover and refrigerate overnight or at least for 4-5 hours.
  • Serve chilled with toppings (fruits, granola, berries, coconut flakes etc).
