INGREDIENTS

  • 1/2 cup quick oats
  • 3 cup full fat milk
  • 1/2 cup carrot chopped
  • 3/4 cup jaggery / gudd / canesugar
  • 1 teaspoon ghee / clarified butter
  • 10 cashews
  • 1 tablespoon raisins
  • Pinch of cardamom powder

PREPARATION

  • Add little water in the chopped carrots and cook until soft. Drain the extra water.
  • Heat ghee in a pan, fry the dry fruits and keep them aside.
  • In the same pan fry oats until crisp (Do not burn).
  • Now add milk and bring it to boil, now keep cooking on a medium flame until the oats is cooked. Not too thick, as it will become thick later.
  • Add cooked carrot, jaggery, fried dry fruits and pinch of cardamom.
  • Serve oats carrot kheer hot or chilled.
