Butterless Eggless Chocolate Cake

INGREDIENTS

  • 1.5 cup whole wheat flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1/2 cup tutti fruity
  • 1/2 cup water
  • 3/4 cup jaggery/cane sugar
  • 1 tablespoon apple cider vinegar
  • 3 tablespoon curd/yoghurt
  • Half teaspoon baking soda
  • 1/4 cup oil (any neutral flavoured vegetable oil) or melted butter
  • 1 teaspoon vanilla extract

PREPARATION

  • Sift whole wheat flour, baking powder, salt. Mix tutti fruity in it.
  • In a bowl mix jaggery powder and water. Once the jaggery is dissolved add oil and vanilla.
  • Take a small bowl, add curd, vinegar and baking soda. Let the mixture froth.
  • Now add all the wet ingredients to the dry ingredients and fold well.
  • In a greased and dusted cake pan, pour the batter.
  • Preheat oven for 350 F, bake the cake for 40-50 minute or until a tooth pick comes out clean.
  • Let the cake cool. Decorate with cherries and icing.

Notes

  • You can add 1/2 cup of pitted fresh cherries.
  • You can melt the jaggery in water and filter before using to prevent impurities.
  • I used canola oil .
  • You can use half all purpose flour (maida) and half whole wheat flour.
