INGREDIENTS

  • 1/2 cup quinoa
  • 1 medium onion chopped
  • 2 potato boiled
  • 1 small carrot boiled
  • 1/4 cup green peas boiled
  • Salt to taste
  • 1 teaspoon ginger paste
  • 1 tablespoon coriander leaf chopped
  • 1/4 teaspoon garam masala
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red chilly powder

  • 1/4 cup maida / all purpose flour
  • 1/2 cup water
  • 1 cup bread crumbs

PREPARATION

  • In a bowl, mash all the boiled vegetables.
  • Wash and cook quinoa in 1 cup of water with little salt. Cook until all the water is absorbed.
  • Add all the spices, chopped onion, green chilly, coriander leaf, cooked quinoa and ginger paste to the mashed vegetables. Adjust salt.
  • Mash everything together and make a fine mixture.
  • Divide the mixture into small balls, and make round cutlets with the help of palm.
  • Mix maida with water and make a smooth paste.
  • Dip each cutlet into maida paste, and then coat with bread crumbs.
  • Shallow fry cutlet with oil or arrange cutlets on a baking tray lined with parchment paper.Preheat oven at 350 F. Bake cutlets for 20 minutes, 10 minutes each side.
  • Serve hot with tomato ketchup or green chutney with tea.
