Quinoa is a healthy alternative of rice due to its low carb but high protein and fibre content. Quinoa kesari/halwa/pudding is a dessert made of this super food. It’s quick and easy to make. You can have it for breakfast or as a dessert.

INGREDIENTS

  • 3 cups of water
  • 1 cup(340 grams) quinoa
  • 2/3 cup (220 grams) cane sugar
  • Few cashew nuts
  • 2 tablespoon ghee
  • 1/4 teaspoon cardamom powder
  • Pinch of saffron

PREPARATION

  • To make quinoa halwa/ kesari soak quinoa in water for 15 minutes. After 15 minutes, wash, drain and keep it aside.
  • Heat ghee in a pan, fry cashews until golden brown. Keep the cashew and the ghee aside.
  • Now add the soaked quinoa in the same pan and fry for 2 minutes.
  • Add water and cook until quinoa is soft and fluffy.
  • Once quinoa is cooked add cane sugar, saffron and cardamom powder. Cook until sugar melts.
  • Finally add fried cashews and remaining ghee. Mix well and switch off the flame.
  • Serve hot.
