Easy mix vegetable fried rice Chinese style is my got to rice dish, when I don’t feel like cooking and curry along with rice or if I have cooked rice leftover.
This is very simple recipe and you can change it as you like and how you like add as many vegetables you want or sauces you like. Its a great recipe for lunch box and meal prep.

INGREDIENTS
- 4 cups of cooked rice
- 1 small onion chopped
- 1/4 of cabbage head chopped
- 1 small carrot chopped
- 1 small capsicum chopped
- 2 table spoon ginger garlic paste mixture
- 4 tablespoon spring onions (optional)
- Tomato ketchup
- Soya sauce
- Sriracha chilly sauce
- Black pepper powder
- Salt to Taste
- 2 tablespoon oil
- Vinegar or lemon optional

PREPARATION
- In a wok or frying pan heat oil. Add chopped onions and fry until soft.
- Now add ginger garlic paste and cook until the raw smell is gone.
- Add all the chopped vegetables and cooked for a minute or two, do not over cook the vegetables as we want them to be little crunchy.
- Now add all the sauces and mix well.
- Finally add the cooked rice, salt and pepper.
- Mix well and off the heat and cover the rice for 2 minutes.
- Serve the hot.
