Easy upside down orange cake 🙂 made with fresh orange juice and slices.

I love all fruit cakes, specially strawberry, pineapple and apple. This is a tried and tested upside down orange cake recipe for very soft, moist and delicious orange cake.

This recipe uses fresh orange juice, orange slices and orange zest. For those you are new to baking, orange zest is nothing but grated top layer (coloured part) of the orange peel.

INGREDIENTS

For Top Layer

  • 1/4 cup sugar (50gram)
  • 1 cup water (240ml)
  • 2 Orange peeled and sliced into round
  • 1 tablespoon butter (15gram)
  • Small cinnamon stick (optional)

For Sponge Cake

PREPARATION

  • To make the top orange layer of the cake, in a pan heat 1 tablespoon of butter. Once the butter is melted, add cinnamon stick, 1/4 cup of sugar and 1 cup of water.
  • Once the sugar dissolves and the solution is bubbly, add the peeled and thinly sliced orange. Cover and cook for 5 minutes. Keep it aside and let it cool.
  • Preheat oven at 350 degree F.
  • To make sponge cake , in a mixing bowl sift flour, baking powder, baking soda and pinch of salt.
  • Mix curd (yoghurt), oil, powdered sugar, vanilla essence, orange zest and orange juice.
  • Add the flour mixture to the wet ingredients and fold everything together well.
  • Grease and dust the cake tin. Place a piece of baking paper (parchment paper) on the bottom of the tin.
  • Now place the glazed orange pieces on the bottom of the cake tin neatly. Save the glaze (syrup) for later.
  • Pour the cake batter on the orange slices.
  • Bake for 30-40 minutes or until a tooth pick comes out clean.
  • Cool completely. Add the remaining glaze on the top.
  • Upside down orange cake is ready.

NOTES-

  • I used seedless mandarine oranges. You can use any orange like blood orange, Nagpur orange etc.
  • I used fresh orange juice.
  • You can use oranges with the peel, just slice thinly.
