If you are a caramel fan try this easy peasy caramelized semiya payasam this Vishu, Onam or just when you want to cook a quick dessert.
This payasam can be served hot or chilled.

Ingredients
- 1 liter of full fat milk
- 3/4 cup sugar
- 1/4 tsp cardamom powder
- Handful of cashews
- 3/4 cup of vermicelli/semiya
- 1 tbsp ghee

Steps to make caramelized semiya payasam
- To make caramelized semiya payasam, take a heavy bottomed deep pan melt one 1 tablespoon of ghee and roast vermicelli/semiya until golden brown. Keep it aside.
- In the same pan add 3 tbsp sugar. Add 1.5 tbsp of water to this and caramelize. Once the sugar caramelizes and reaches an amber shade add 1/4 cup of hot water (be careful while adding it, it will splash).
- Add milk and mix well. Bring it to a rolling boil.
- Once the milk starts boiling add semiya and mix well. Bring it to boil and simmer till semiya cooks through.
- Once the semiya is almost done, add the sugar and mix well.
- Caramelize 2 tbsp sugar once the sugar caramelizes, add cashew nuts. Make sure the nuts are coated well with caramel. Transfer to a butter paper and let it cool completely. Use as topping as whole or crushed.

Tips-
- You can use roasted vermicelli or skip the roasting of vermicelli.
- Try not to burn the sugar while caramelizing, add water-milk as soon as sugar changes the colour to amber brown. Burnt sugar may spoil the taste.
- You can skip the caramelized cashew and just add ghee roasted cashew and raisins.
