Easy And Quick Strawberry Pachadi
Pachadi is a very popular South Indian side dish made up of yoghurt and seasonal vegetables such as bottle gourd, beetroot etc . It is one of the main side dish of sadya. The main ingredients of this dish are coconut, yoghurt (curd), green chilly and topped with mustard. Strawberry pachadi is one of the many variations of regular pachadi.
To make strawberry pachadi, whisk 1 cup of curd and keep it aside.
Wash and chop strawberries into small pieces. Add it to the curd.
Meanwhile, in a blender make fine paste of grated coconut and 1 teaspoon jeera (cumin seeds). Add this paste to the curd and strawberry mixture.
Heat one tablespoon of coconut oil in a pan and splutter 1 teaspoon of mustard seeds.
Now add one dry chilly, curry leaves, green chilly chopped and shallot sliced. Saute for 1 minute.
Turn off the heat. Finally add curd, coconut and strawberries mixture. Adjust salt to taste.
At the end, crush 1 teaspoon of mustard seeds and top on pachadi for extra flavour.
