INGREDIENTS
- 450 grams of spaghetti
- 450 grams of baby spinach
- 3-4 garlic pods
- 2-4 tablespoon of oil
- Salt and pepper to taste
- 1/2 cup parmesan cheese optional
PREPARATION
- Boil water in a thick pot. Add spaghetti, a little salt and one tablespoon of oil. Cook for 5-7 minutes or as directed on the package.
- Strain spaghetti in a strainer. Reserve a cup of pasta water.
- In a pan heat oil, add chopped garlic. Cook for few seconds or until the raw smell is gone.
- Now add washed spinach leaves and saute with garlic until wilted. Remove from heat and keep it aside.
- Once the spinach is cooled, transfer it in a blender and make a puree. Add a little pasta water if needed.
- Transfer the spinach puree in a pan with pasta and pasta water. Heat throughly until combined. Adjust salt and pepper.
- Sprinkle cheese and serve spinach spaghetti hot.
