INGREDIENTS
- 1 cup baby spinach (palak)
- 1/2 cup apple chopped
- 1/2 cup paneer (cottage cheese) cubbed
- Hand full of cashew nuts and almonds
- 1tbs curd (yoghurt)
- 2tbs vinegar
- 2tbs honey
- 1tbs olive oil
- 1/2 tsp black pepper
- 1/2 red chilly powder
- Salt to taste
PREPARATION
- Wash and pat dry baby spinach.
- Marinate paneer (cottage cheese) cubes with curd, salt and red chilly powder.
- Shallow fry paneer in any oil of choice. Two minutes both the sides or until golden brown.
- In a small bowl mix oil, honey, vinegar, salt and pepper for dressing.
- In a salad bowl add spinach, chopped apples, fried paneer cubes, chopped dry fruits. Add the dressing and mix well. Spinach apple salad is ready.
NOTES
- If making before hand add dressing before serving.
- Can substitute vinegar with lemon juice.
- Can substitute olive oil with any oil.
