INGREDIENTS
- 1 cup rava / sooji /semolina
- 1 tablespoon maida / all purpose flour
- Salt to taste
- 6 tablespoons water
- Oil for deep frying

PREPARATION
- Take sooji and salt to taste in a bowl. Mix well and add 6 tablespoons of warm water and mix well. It will be crumbly. Keep it covered for 10 minutes, so that sooji absorbs all the water.
- After 10 minutes, add 1 tablespoon maida and make a dough. Do not add more water. Keep kneading for 10-15 minutes, to make a firm but not too tight dough.
- Apply 1 teaspoon of oil on the dough and keep it covered for 30 minutes.
- After 30 minutes, knead the dough for 1 more minute. Then make 3-4 parts of the dough.
- With the help of a rolling pin, roll each dough into very thin tortilla or roti.
- Now cut into small round shapes puri, with the help of a small round cookie cutter or any bottle cap.
- Heat oil in a pan, fry the puri one at a time, on medium flame.
- Serve with pani puri pani and potato masala.
