Take sooji and salt in a bowl. Mix well and add water. It will be crumbly. Keep it covered for 10 minutes so that sooji absorbs all the water.
After 10 minutes, add 1 tablespoon maida and make a dough. Do not add more water. Keep kneading for 10-15 minutes, to make a firm but not to tight dough.
Apply oil on the dough and keep it covered for 30 minutes.
After 30 minutes, knead the dough for 1 more minute. Then make 3-4 parts of the dough.
With the help of a roller, roll the dough into very thin tortilla or roti.
Cut into small round shapes puri, with the help of a small round cookie cutter or any bottle cap.
Heat oil in a pan, fry the puri one at a time, on medium flame.
Serve with pani puri pani and potato masala.
