Easy peasy whole wheat avocado penne pasta for those lazy weekday dinner :-) Also, a fun way to feed avocado to kids.

- 1 cup whole wheat penne pasta
- 2-3 avocado mashed
- 1/2 red onion chopped
- 1/4 teaspoon garlic powder or garlic minced optional
- Salt to taste
- 1/4 cup tomato chopped optional
- 1/4 lemon juice
- 2 tablespoon cilantro chopped
- 1/4 teaspoon black pepper powder or red chilly powder
- 1 green chilly chopped optional
Boil water in pot with 1 teaspoon salt and oil. Add pasta and cook until soft. Drain water and cool.
In a mixing bowl, mash avocado pulp, add onion, tomato, salt, pepper, cilantro, green chilly, lemon juice and garlic powder. Mix everything well.
Finally add the cooked penne pasta and mix well.
Easy peasy avocado penne pasta is ready.
- Add less spices and avoid green chilly if making for kids.
- Adjust quantity of avocado as liking.
- Recipe can be doubled.
