Whole Wheat Avocado Penne Pasta

Easy peasy whole wheat avocado penne pasta for those lazy weekday dinner :-) Also, a fun way to feed avocado to kids.

Ingredients
  

  • 1 cup whole wheat penne pasta
  • 2-3 avocado mashed
  • 1/2 red onion chopped
  • 1/4 teaspoon garlic powder or garlic minced optional
  • Salt to taste
  • 1/4 cup tomato chopped optional
  • 1/4 lemon juice
  • 2 tablespoon cilantro chopped
  • 1/4 teaspoon black pepper powder or red chilly powder
  • 1 green chilly chopped optional

Instructions
 

  • Boil water in pot with 1 teaspoon salt and oil. Add pasta and cook until soft. Drain water and cool.
  • In a mixing bowl, mash avocado pulp, add onion, tomato, salt, pepper, cilantro, green chilly, lemon juice and garlic powder. Mix everything well.
  • Finally add the cooked penne pasta and mix well.
  • Easy peasy avocado penne pasta is ready.

Notes

  • Add less spices and avoid green chilly if making for kids.
  • Adjust quantity of avocado as liking.
  • Recipe can be doubled.
