INGREDIENTS
- Brown bread (any bread of choice)
Curd sandwich
- 1 cup curd
- 1/4 cup capsicum chopped
- 1/4 cup tomato chopped
- 1 green chilly (optional)
- 1/4 teaspoon black pepper
- 1/4 teaspoon red chilly power
- Salt to taste
- 1 tablespoon coriander leaf chopped
- 1 tablespoon mint leaf chopped
Egg sandwich
- 2 hard boiled egg
- 4 tablespoon cream cheese or mayonnaise
- 1/4 teaspoon black pepper
- 1 tablespoon coriander leaf / green onion chopped(optional)
- Salt to taste
- 1 teaspoon lemon juice (optional)
- 1 teaspoon prepared yellow mustard (optional)
Cucumber Sandwich
- 2 cucumber sliced into thin rounds
- 4 tablespoon butter at room temperature
- 1/4 teaspoon black pepper
- 1 tablespoon dill or coriander leaf
- Salt to taste
PREPARATION
CURD SANDWICH
- Hang curd in a muslin cloth or keep it in a fine strainer to remove all the water for at least half an hour (you can also use thick greek yoghurt instead and skip this step).
- Add chopped tomato, capsicum, green chilly, coriander leaf, mint leaf, salt, pepper and red chilly powder to the curd and mix well.
- Spread evenly on the bread and cut into triangles (you can also toast the sandwich with butter).
EGG SANDWICH
- In a bowl, mash hard boiled egg with the help of a fork.
- Add mayonnaise (or cream cheese), green onion ( or coriander leaf), lemon juice (optional), mustard (if using), salt and pepper.
- Spread evenly on the bread and cut into triangles.
CUCUMBER SANDWICH
- Slice cucumber into thin round slices.
- Take soft butter in a bowl, add pepper, salt and dill chopped (or coriander leaf chopped). Mix well and spread on the each bread slice.
- Arrange cucumber slices and keep another bread slice on top. (Spread butter on both the bread slices and do not double the cucumber slices).
- Cut the edges and cut into triangles.
