INGREDIENTS

  • Brown bread (any bread of choice)

Curd sandwich

  • 1 cup curd
  • 1/4 cup capsicum chopped
  • 1/4 cup tomato chopped
  • 1 green chilly (optional)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red chilly power
  • Salt to taste
  • 1 tablespoon coriander leaf chopped
  • 1 tablespoon mint leaf chopped

Egg sandwich

  • 2 hard boiled egg
  • 4 tablespoon cream cheese or mayonnaise
  • 1/4 teaspoon black pepper
  • 1 tablespoon coriander leaf / green onion chopped(optional)
  • Salt to taste
  • 1 teaspoon lemon juice (optional)
  • 1 teaspoon prepared yellow mustard (optional)

Cucumber Sandwich

  • 2 cucumber sliced into thin rounds
  • 4 tablespoon butter at room temperature
  • 1/4 teaspoon black pepper
  • 1 tablespoon dill or coriander leaf
  • Salt to taste

PREPARATION

CURD SANDWICH

  • Hang curd in a muslin cloth or keep it in a fine strainer to remove all the water for at least half an hour (you can also use thick greek yoghurt instead and skip this step).
  • Add chopped tomato, capsicum, green chilly, coriander leaf, mint leaf, salt, pepper and red chilly powder to the curd and mix well.
  • Spread evenly on the bread and cut into triangles (you can also toast the sandwich with butter).

EGG SANDWICH

  • In a bowl, mash hard boiled egg with the help of a fork.
  • Add mayonnaise (or cream cheese), green onion ( or coriander leaf), lemon juice (optional), mustard (if using), salt and pepper.
  • Spread evenly on the bread and cut into triangles.

CUCUMBER SANDWICH

  • Slice cucumber into thin round slices.
  • Take soft butter in a bowl, add pepper, salt and dill chopped (or coriander leaf chopped). Mix well and spread on the each bread slice.
  • Arrange cucumber slices and keep another bread slice on top. (Spread butter on both the bread slices and do not double the cucumber slices).
  • Cut the edges and cut into triangles.
