I always wanted to try these thin Japanese rice noodles and make an Indian version out of it. Therefore, I decided to make the classic lemon rice noodles. This tasted similar to the lemon rice but more tastier. It is very quick and easy to make. So, when you are bored of eating rice daily, then you can try these lemon rice noodles. VERMICELLI PAYASAM / SEMIYA PAYASAM
INGREDIENTS
- 250 grams thin rice noodles
- 1 small onion chopped
- 2 green chilly chopped
- 1 teaspoon ginger paste
- one spring of curry leaves
- 1 tablespoon peanut
- 1 tablespoon cashew
- 1 teaspoon urad dal/ spilt gram (optional)
- 1 teaspoon mustard seeds
- One pinch of hing ( asafoetida)
- 3 tablespoon oil
- 1/2 teaspoon turmeric powder
- 1 lemon juice
- Salt to taste
PREPARATION
- To make lemon rice noodles, boil water in a pan. When the water starts boiling, add rice noodles and cook for 2 minutes.
- Drain rice noodles in a strainer and add one tablespoon of oil and mix well, this is to prevent noodles from sticking with each other.
- Heat 2 tablespoon of oil in a pan, and splutter mustard seeds, urad dal, peanuts, cashews nuts and hing (asafoetida).
- Add chopped chillies, ginger paste and curry leaves cook until the raw smell is gone.
- Now add chopped onions and cook until translucent.
- Add salt and turmeric powder.
- Finally, add cooked noodles, lemon juice and adjust salt. Mix well and cook for another 2 minutes.
- Lemon rice noodles is ready. Serve hot with tea/coffee.
