Spaghetti is my go to option for those lazy and tired days when you really don’t want to cook. Here are some of my favourite easy and quick spaghetti recipes that I am sure you will love them. Also all these recipes are vegan.
SPAGHETTI WITH MEAL MAKER/SOYA CHUNKS
SPAGHETTI WITH SPINACH AND HERBS
INGREDIENTS
- 200gm spaghetti
- 1/4 cup mint leaves
- 1/4 cup cilantro/ coriander leaves
- 1/2 cup spinach leaves blanched
- 1/4 cup olive oil
- Half lemon juice
- 4 garlic clove
- 1 green chilly
- 1/4 teaspoon black pepper powder
- Salt to taste
PREPARATION
- Cook spaghetti in a pot of boiling water with salt and 1 teaspoon of olive oil until its done. Drain and keep aside.
- In a blender puree blanched spinach, mint, cilantro/coriander leaves, lemon juice, garlic, green chilly, olive oil, salt and pepper.
- Heat one tablespoon of oil in a pan and add the puree. Cook for 2 minutes.
- Finally add cooked spaghetti. Adjust salt and mix everything well. Cook for another 2 minutes.
- Garnish with grated cheese or sesame seeds.
